Gluten

Working in the restaurant I have noticed a lot of people going Gluten Free. It dawned on me that a lot of people don’t know what gluten is.
Celiac Disease - is a chronic hereditary intestinal disorder in which an inability to absorb the gliadin portion of gluten results in the gliadin triggering an immune response that damages the intestinal mucosa
Now to break it down gluten has to do with wheat that is made into flour and the proteins in that flour. Gluten is tough, elastic, grayish substance resembling chewing gum. Basically some immune systems can’t process the tough gluten which causes Celiac Disease. So of course bread, dough, pasta, and any foods that may contain have gluten. If your out to eat and you want to avoid gluten simply speak up and tell the server don’t ever assume that a certain food or dish doesn’t contain something. It’s nothing wrong with being gluten free, just make sure you know what to avoid. Great food is always made with Love by someone who Loves to make it. Peace
